HOW TO MAKE 16 MUFFINS:
100 g melted butter
3-4 bananas
1 dl coconut milk
4 eggs
A nip of cinnamon and nutmeg
1 teaspoon vanillapowder
2 teaspoons baking powder
6 teaspoons psyllium husks
2 dl coconut flour
80 g dark chocolate 70%
Stir bananas, coconut milk + eggs
Add melted butter and stir
Add spices and stir
Add psyllium husks + coconut milk
Add chocolate
200ºc / 390ºF
20-25 mins
Serve with whipped cream

I got the inspiration for this recipe here from Danish LCHF foodblogger Jane Faerber who makes an awesome banana bread. My muffins are adjusted so they include no dates and no sugar and they still taste gooood…
